So, you think you want to be in the restaurant business? Leaving New York and hitchhiking to Hollywood at the age of twenty eventually found the author working in the restaurant business. After thirty-five years of developing, owning, and operating six sit-down restaurants, three Taco Bells, two fast-food hamburger joints, and consulting on several other restaurant projects, he has comprised an autobiographical account of his experiences in the restaurant business. The author is offering advice and experience to help future restaurateurs realize their dream by helping them to recognize and avoid the pitfalls of failure that he has personally seen and experienced in his restaurant career. Louis Pasteur once said that "...chance favors only the prepared mind," and that is one of the intents of this book- to prepare your mind for what you should consider, what you must plan for, and what you will experience in fulfilling your dream in opening a restaurant and defining your personal life.
